Those dice games sound like fun. I am definately going to give that a try. Usually I just end up laying around camp or practicing woodscraft(making a bow drill, playing with a throwing stick, you know things that I can't do at home for fear of freaking out the neighbors).  Something pretty fun if I hike with someone though is to take a green branch or vine and make a circle out of it, drive another stick into the ground and play wilderness horseshoes/ring toss. it is pretty fun.
