I did two of them over the weekend and am not liking the results. I think the cliff bar texture is going to be the one I want but  I can't seem to get the consistency right.
  Anyone have a tried and true recipe?

There's an Indian Heaven Snack in backpack gourmet that's really good.

Toast until lightly browned, then set aside
  1/2 cup sesame seeds

Boil in a large skillet over medium heat
 1/2 cup packed brown sugar
 1/2 cup honey
 2 tbsp canola oil
 1/2 cup water

Reduce heat and simmer

Remove from heat and mix in thoroughly
 1 cup peanut butter
 1/3 cup whole wheat flour
 2 1/2 cup rolled oats
 1/2 cup wheat germ
 1 1/2 cup your choice fine chopped nuts

Roll into walnut sized balls and then roll in the sesame seeds. Set onto plates, cover and chill several hours until firm.

Store in baggies at room temp
