I recently purchased a Garmin 60Cx GPS and have also recently had the chance to hike some parts of the Pinhoti trail.  I would like to find some maps I can download to my GPS unit that shows the Pinhoti, as well as other Alabama trails.  I found some maps that have some of the waypoints on them, but none that show the actual trails.  I have paper maps but would like to have themon the GPS also if possible.  I plan to do more sections of the Pinhoti as well as some of the other trails in the state and since I will be doing a lot of this hiking alone, having the GPS maps is a little more insurance.

Any idea where I can get some of this GPS data?

You can download free topographic maps from here, and then use Garmin's software to send it to your GPS.  There's a few steps involved, but I can't remember them off the top of my head.

As far as seeing the actual trails on your map: I don't know what the "best" method is,  But I tend to download other people's GPS tracks and then send them to my handheld GPS.  The downsides:
- Tracks might not be 100% accurate - but I honestly haven't had any real problems. 
- Handhelds are limited in the number of tracks they can store.  I think mine can store 20 tracks.
